How the 360-Degree Heat Actually Works
We don’t just throw these IR lamps in randomly. We place them in a specific array around the rotating carriage. Here’s the cool part: while hot air can get blocked by a crowded tray of dense dough, IR waves just cut right through. As the rack spins, the heat hits the product from every single angle. It’s like the heat is wrapping around the bread.
The Gear Under the Hood
Most of the time, we’re talking about quartz-halogen tubes. We pick these because they pack a ton of power into a tiny space. And because they’re high-voltage, they ramp up fast. Really fast. You aren’t waiting hours for the oven to hit the right temperature; it happens in minutes. That saves you a lot of wasted time in the morning. We use quartz for the envelope because it can handle insane heat without breaking down. Plus, we use R7s or SK15 connectors. Why? Because in a rotating oven, things vibrate. These connectors stay locked in tight so you aren’t dealing with a random power failure mid-bake.
The Trade-offs (and how to avoid them)
Replacing these lamps is easy. You just pull the old tube out and slide a new one in. Simple. But there is a catch. Quartz is fragile. If you let flour or grease build up on the glass, it creates these little “hot zones” that can actually crack the tube. It’s a pain, but you’ve got to keep them clean if you don’t want them burning out early. One last thing: keep an eye on your vents. If your exhaust is clogged, the heat just sits there, and it’ll eat away at the lamp’s end caps. Keep the air moving, and your gear will last a lot longer.
