
Why Fast Heat Saves You Money in the Bakery
In a commercial oven, there’s a frustrating little gap between the temperature you set and the temperature the oven is actually hitting. That gap is where your profit disappears. We make replacement infrared lamps specifically to kill that gap.
The trick is all in the response time
Most heating elements are slow. They rely on moving air or slow-moving heat, which takes forever to get where it needs to go. Our lamps use short-wave infrared. Instead of heating the air and hoping it reaches the dough, this tech hits the surface of the bread directly. When your controller asks for heat, these lamps jump to full power in seconds. This stops something called “thermal overshoot.” You’ve probably seen it happen: the heater stays on too long because the sensor hasn’t “felt” the heat yet. By the time the sensor finally says “stop,” the oven is way too hot. Now you’re wasting energy just trying to cool things back down. With a fast response, the power cuts the second you hit your target. Simple.
The nuts and bolts
These are designed as drop-in replacements. We use quartz glass and halogen gas fills because they last longer. The halogen cycle stops the filament from evaporating, which is huge when you’re cycling the power on and off all day. Just a heads-up: double-check your voltage and wattage before you swap them out. A higher-wattage lamp gives you a great, deep brown crust, but it puts more stress on your wiring. If you’re pushing 2000W or more in a tight spot, take a look at your sockets. If they look brittle or worn, replace them. Brittle sockets lead to arcing, and that’s a quick way to burn out a brand-new lamp.
Getting it right on the floor
Installing these is easy, but where you put them matters. If the lamp is too close to the product, you’ll end up with a scorched top while the middle is still raw. It’s a pain. To avoid that, just verify the focal point of the beam. You want that heat hitting every tray evenly, from the center to the edges.
